RuBisCo is a protein and is abundant in grasslands. That’s why our partners at CBIO – Centre for Circular Bioeconomy at Aarhus University are researching how to use this “grass protein” for human nutrition. It’s vegan, it’s cheap and it’s sustainable, a total win-win situation.
